Blackened Copper River Sockeye Salmon with Tropical Salsa

 

Ingredients

Olive oil

 

For Salsa

1/2 bunch cilantro, finely chopped

1 red bell pepper, finely chopped

1 green bell pepper, finely chopped

1 jalapeño, finely chopped

1 mango, diced

1 cup fresh pineapple, diced

1/2 cup chives

1 fresh squeezed lemon

1/4 cup mango purée

 

For Blackening Seasoning

1/4 cup oregano

2 Tbsp smoked paprika

2 Tbsp ground ancho chili

1 Tbsp garlic powder

3/4 tsp salt

2 Tbsp cayenne pepper

1 Tbsp thyme

1 Tbsp basil leaf, finely chopped

 

Directions 

1 Pat the salmon dry and sprinkle with salt and pepper on both sides, preheat the oven to 400° F.

2 Mix salsa ingredients and blackening seasoning ingredients in separate bowls.

3 Coat the flesh-side of Copper River Sockeye Salmon with blackening seasoning.

4 Sear the flesh-side of Copper River Sockeye Salmon 1-2 minutes in a hot pan with oil.

5 Transfer to the foil-lined sheet pan, skin-side down.

6 Cook in the oven for 4-5 minutes or until fully cooked.

7 Top blackened Copper River Sockeye Salmon with salsa, pair with preferred salmon pairing, and enjoy!
